Røros Dairy is located in Røros, which is a town in a mountain region of the eastern parts of Southern Norway. Røros was historically a mining town and placed on UNESCO’s World Heritage List. Beside traditional economic activities such as agriculture and forestry, tourism is an important activity for the town and the district. Figure 1: Map of Norway and Røros Røros Dairy is the only organic dairy in Norway, established in 2001. It has experienced a steady growth since established and has today 20 employees and a turnover of 45.5 mill NOK (5,5 mill EUR) in 2013. Healthy growth in mid-scale values based food chains Organic Eprints

This paper is a literature review of studies of mid-scale food values based food chains and healthy growth processes in the organic food sector. By midscale values based food chains we mean productions that are growing out of the niche/small scale market into larger volumes and sales. Previous research have shown that niche market chains might have inherent problems in moving from niche to volume, while mainstream large-scale markets have inherent problems in securing and advancing organic values. State of the art review - On healthy growth initiatives in the mid-scale values-based chain of organic food Organic Eprints

The aim of the paper is to present results from a review of successful mid-scale organic values-based chains, where characteristics of such chains and their strategies for growth are in focus. The work is part of an EU-project, Healthy Growth, where ten European countries participate. Results are based on reviewed research in each participating country and a general review of research on successful chains. The role of the business logic for growing value chains of organic food - first results of an international case study analysis Organic Eprints

Values-based food chains link farmers, processors, wholesale and retail traders in a way that the end-consumer receives a product with additional quality attributes such as regionality, fair trade, high animal welfare or nature conservation standards. The transmission of such additional values which are beyond general food standards requires chain specific objectives and well-targeted management strategies. Results show that all studied businesses/initiatives have consistent business logics for their internal organisation and cooperation and communication in the specific chain. The business logic ensures the effective value transmission based on e.g. controlling and information measures.

Abstract – A market driven sustainable develop-ment of organic agriculture depends on the abilities of the organic food chains to mediate qualities (vales) form place of production to place of consumption. A Pirsig’s based relational analysis reveals the importance of the abilities of all actors of the food chain to relate to and to include these qualities in their strategy. Transparency along the whole chain all way back to place and mode of production seem important.

Volume Growth in Quality Food Firms – Lessons and Reflections from Norway Organic Eprints

A review of research on growth processes in quality food chains in Norway shows that only a few studies have focused on growth in such chains. Studies look at food businesses as the focal unit and discover many challenges for local firms with growth ambitions. The main issues seem to concern distribution and follow-up sales, where communicating qualities of products to customers is a key challenge. Other challenges observed were developing and maintaining qualities of products to gain premium priced products, the financing of growth, developing the business organisation and establishing cooperation and networks for growth.
